This book was later reprinted by Simon & Schuster; this IS the first printing of the original first edition. "Now that I have given you the Welcome, it is time to look in the pot. Basically, our food is simple, inexpensive, and plentiful. As slaves, our daily ration included one salt herring and one pint of corn meal. Occasionally, a piece of salt pork was substituted for the herring. On fortunate days we were given sour milk or buttermilk and perhaps a portion of molasses. Virginia slaves were often allowed to raise vegetables, chickens and a few pigs. Corn was the main garden crop because it did not require much care, and could be used either as a vegetable or it could be ground and used for bread. Poke, dandelion and other greens were gathered wild. Every few years the pigs were turned out of their pens, and turnips were grown in the fertile soil. Variety was added to our diets with fish and crabs from the rivers, and small game from the surrounding forests. These basic ingredients--corn, pork, chicken, greens, seafood, sour or buttermilk and molasses have stayed with us for 300 years and still form the heart of Negro cooking. We’ve added sauces, spices, butter, relishes and wines--we’ve pretty much replaced molasses with sugar, and new houses have taken away most of our small game, but essentially we still start with the same foods. The Welcome that comes from our kitchens depends on these basic ingredients, and, of course, a good heart and a light hand." This classic book of American Negro cooking includes almost 200 recipes. Her themes revolved around mental health. "There are two worlds in the minds of men: the one is artificial, selfish, and personal, the other is real and universal; the one is limited, material, essentially of the earth, the other supposes a kind of larger cosmopolitanism, and has no geographical limits at all; it is as wide as humanity itself, and only bounded by the capacity for experience, insight, and sympathy in the mind and heart of man. A true man of the world, therefore, is not primarily of it, --a true man of the world must know and understand the world; and in order to do so, he should be able at any time to get it into perspective…." 61 pages.
